Creamed Potatoes
This recipe might seem a bit long winded but it will give you the best tasting mashed potatoes you have ever made and is a good place to start out with your new potato ricer.
- Peel the potatoes and immediately plunge into cold water
- Leave to soak for 30 minutes
- Remove from cold water and place in pan of salted boiling water
- Boil for 20 minutes or until tender leaving the pan uncovered
- Drain the potatoes and then pour over some seasoned melted butter
- Now get your potato ricer and crush the potatoes
- Add some hot milk and beat with a fork until fluffy and light
- Serve with bangers and onion gravy
Shepherds Pie topped with Creamed Potatoes
Use your potato ricer to make a sumptuous topping for your pie
- Chop an onion and heat it in a frying pan until it turns clear
- Remove onions from pan
- Add 500g of lamb mince (or beef if you want to make a cottage pie) to the frying pan and brown off for 10 mins
- Drain off any of the brown stuff and add the onions back into the pan
- Add an Oxo cube or some beef stock and stir in some tomato ketchup and brown sauce
- Add in some chopped carrots, mushrooms and frozen peas and allow to heat through for 20 mins
- Cream up some potatoes with your potato ricer (follow the above recipe for the best topping)
- Scoop the beef mixture into a baking tray and cover with the creamed poatoes
- Use a fork to rough up the mash and then place in the oven
- Cook for 20-25 minutes on a medium to high heat and until the topping is golden brown
- Plate and serve!
